Trust me when I tell you that this mango margarita popsicle is the only popsicle you’ll need this summer! It’s super simple and easy to make. It’s also refreshing and has just the right amount of booze. But be careful-this will sneak up on you.
I used the Zoku Classic Pop Mold to create the perfect popsicle shape. I got it at TJ Maxx a few years ago for $10. Here is the same one at Sur La Table. But if you want a less expensive one, check out the options on Amazon. Ultimately, if you don’t feel like buying the popsicle molds, you can also do it old school and freeze the margarita popsicles in plastic cups. And add a popsicle stick to the mixture before you stick it in the freezer.
One important thing to note is that the margarita popsicle recipe calls for 1/4 cup of tequila. And I know what you’re thinking-you want to put the whole bottle of tequila in there. But you have to resist that urge. Alcohol doesn’t fully freeze. And adding more alcohol than the recipe calls for, will make freezing the popsicles a challenge. Instead, what I recommend is adding some tequila to a glass. And then, dipping the frozen margarita popsicles in the tequila as you eat it. Try it and thank me later :).
